MILWAUKEE — The Diplomat on Brady Street is close to celebrating its three-year anniversary this month. It's a new American Cuisine restaurant that is sticking to carry-out for now because of the pandemic.
"We have a lot to be happy about," says owner Dane Baldwin. "I mean today were cooking food in the back, we're getting ready for our service tonight. Yeah, it's unfortunate that we can't see some of those familiar faces coming through the door and sitting on the patio but that time will come."

Since taking over, Dane redid the entire inside to make you feel comfortable when they do decide to open the doors again.
"From a scientific standpoint and the reports that we're getting, the pandemic is going to be longer-lasting than we initially thought," he admits. "We would have to find a way to pivot and continue moving forward with the business."
Their comfort carry-out food is something you want to try folks.
"I think we put together a series of items that please a lot of people," Baldwin says. "So things like the pot pie, the Cuban Sandwich, these are all really kind of comfort foods. The Lobster Roll sandwich is dressed with celery root, mayo, and kind of like our twist on it. I really love the flavor of the celery root with lobster. We bring a live lobster to make it."
