MILWAUKEE — Chicken tenders breaded with Milwaukee beer-batter, made from scratch biscuits drizzled with honey butter. Ooey gooey butter cake. Those are just a few of the items on the menu at Cream City Cluckery, a new "ghost kitchen" inside Fiserv Forum.
A ghost kitchen is a place to prep and cook food that is meant only for delivery or pick-up. Without any games or events at Fiserv Forum, they had to get creative to keep people on the payroll.
"We were able to use assets we already had," said Justin Green, Vice President of Hospitality for the Milwaukee Bucks. "We have this beautiful arena at Fiserv Forum with beautiful kitchens and setups. So we said, 'How do we get the culinary people to make sure they're still working, that we're able to give great product to Milwaukee?'"

Green says the concept also keeps the prices down. "Low cost to the consumer because we don't have a ton of overhead in bringing people in and having a restaurant they have to sit at," said Green.
Menu prices range from $3 for a bowl of mac and cheese to $25 for 20 chicken tenders and a side of tater tots. And they don't skimp on the ingredients, either.
"Everything is 100% fresh," said Green. "We cut down the chicken, we make sure it's unbelievably moist. Every piece is put through a breading and batter process. The batter itself, the breading, the flour, everything is being done here in house. And we're mixing the spices and everything. Then we use local, Milwaukee beer in our beer-batter which makes it fantastic as well."
Apparently Milwaukeeans agree. Green says Cream City Cluckery goes through 150-200 pounds of chicken a day!
When you order from them, expect a piping hot serving.
"Everything is done at the time of order. So we're not doing anything at all ahead and holding it in hot boxes for long periods of time. It's made, it's held just until the person picks it up, and out it goes," said Green.
Cream City Cluckery is open for pickup and delivery Tuesday through Thursday from 11 a.m. to 8 p.m., Friday and Saturday from 11 a.m. to 9 p.m. They are closed on Sunday and Monday.
