MILWAUKEE — Big Daddy's BBQ and Soul Food on Humboldt Ave. in the Riverwest area is a new barbecue restaurant that opened in August and is off to a great start.
Owner Donald Lee started off small.
"Big Daddy's originated in the festivals," he says. "Juneteenth, stuff like that, Garfield days, and then we turned around and finally got us a restaurant on 107th and Brown Deer. Had that for about eight months, but it didn't work out there and we kind of shut it down."
Lee was able to get a fresh start at his new venue here, and he wakes up early to make sure the food is prepared the way his customers like it.
"The process is we get up at four in the morning, we dry rub our meat - all of our meat is dry-rubbed," he explains. "We smoke it on the big smokers, the brisket, and the shoulder. It takes fifteen hours or so and they get smoked in."
