'Cooking with Mimosa': Franklin restaurant creates meal kits during COVID-19 pandemic

You could say that Mimosa restaurant in Franklin has some bragging rights in town. This farm to table hot spot was voted the number one brunch spot in the state of Wisconsin by the New York Daily News.

"First of all, we wanted to celebrate this," says owner Apostoli Evreniadis. "We're a part of this big publication - the New York Daily News. We thought it was absolutely fantastic, so we celebrated, but then we always have to come back, center ourselves to remember even if we are the best we have to continue to become better and better every day and advancing."

They got creative during this pandemic. After laying off 75 percent of their staff, they came up with the popular 'Cooking with Mimosa.'

"For years now, there is this new trend getting delivery of ingredients with instructions to your house," Evreniadis explains. "So we said, why not create something like that locally here with some of the favorite dishes that we have that we feature here at Mimosa? Let's try it."
