Bavette La Boucherie adjusts by offering more takeout and meals to reheat

MILWAUKEE — You have to consider yourself a special place when you're nominated for a James Beard Award. Bavette La Boucherie is in that class.

"I guess the main thing that makes our restaurant special is that we're a Butcher shop and a restaurant," says owner Karen Bell. "So we get a whole animal from local farms, and then cut them up here. Part of that animal will go to our case to sell, and the other part we use on our menu."

Bell and her staff had to make plenty of adjustments during the pandemic.

"We almost completely changed the business model," she explains. "I guess we were fortunate that we have a menu translatable to be for carryout and to go. We have added a few things as far as what we do. Family meals are fully prepared meals for two to four people that we prepare, but you take home cold, and then you can reheat it when you want."
