New Milwaukee Restaurant: A fun twist on an old dish

MILWAUKEE — A new father and son owned restaurant just opened along Milwaukee's RiverWalk that puts an interesting twist on a classic Italian dish.

Welcome to Tua Pasta on 100 E. Wisconsin Ave. It's owned by Alvaro Nino De Guzman and his son Alvaro Nino De Guzman, Jr.

"When you go to the restaurant business, you need to do something that is known but at the same time unique," Guzman Jr., said.

It's a pasta restaurant that serves its customers a la carte. There is no set menu. You get to choose the type of pasta, sauce, toppings, and protein.

"We are trying to simplify a dish by having them picking what they want," Guzman Jr., said.

Here is a glimpse at the menu:

  • sauces: alfredo, four cheese, marinara, pesto
  • toppings: pick five of any 18 toppings
  • pasta: spaghetti, fettuccine, fusilli, conchiglie
  • protein: steak, chicken, scallops, meatballs, ham, shrimp

The menu won't always look like this, though.

"One thing we are doing is rotating toppings and sauces," Guzman Jr., said.

They also serve salads and soon gelato as well, but that's it. Nothing more nothing less. Plus, all the pasta is made fresh on site.

Tua Pasta is part of a trend of restaurants going for upscale food quality in a casual setting. The food is served fast, but don't confuse it with fast food.

"I do believe making people happy with food can make their day happier," Guzman Jr., said.

You can either get a small or large pasta. The small costs $6.75 and the large costs $10.50. They are open Monday through Saturday.
