The former Water Buffalo space in Milwaukee's Third Ward will soon become Blue Bat Kitchen and Tequilaria, a casual restaurant serving tacos, snacks, salads and tequila, according to our partners at the Milwaukee Business Journal.
"BBK finds inspiration in the great coastal beach towns," Hospitality Democracy co-founder, Joe Sorge said in a news release. "We’ll feature a fresh flavorful menu heavy on nostalgia in a relaxed and casual environment that pairs perfectly with Milwaukee’s very first Tequilaria.”
The restaurant's name draws inspiration from the origins of tequila.
"Blue, due to the Blue Agave plants can produce certified tequila," co-founder, Angie Sorge, said. "Bat, because blue agave plants depend on bats for pollination...The name is both playful and serious, just like the food, the tequila and the restaurant.”
The menu is influenced by Joe and Angie Sorge's traveling experiences.
"Together with our executive chef, Alex Sazama, (we) have created the BBK menu to bring our food memories back home to Milwaukee," Joe Sorge said. "Many menu items have a story behind them — how we found it and why we love it—we can’t wait to share them with you."
Blue Bat's parent company, Hospitality Democracy, also owns Milwaukee restaurant brands like AJ Bombers, Smoke Shack and Holey Moley Coffee + Doughnuts.
