To help get in the Mardi Gras spirit Kristina Guerrero and Flavors of Louisiana’s Jennifer Landry Goff have three fun dishes that will have you celebrating like a pro.
1. King Cake
You can only make King Cake from the end of the Epiphany which is always Jan. 6 until Mardi Gras.
2. Alligator Po' Boy
This is a traditional sandwich from Louisiana. It almost always consists of meat, which is usually sloppy roast beef, known as meat curtains, or fried seafood which includes shrimp, crawfish, oysters, crab and our favorite, alligator. The meat is served on baguette-like New Orleans French bread that is known for its crisp crust and fluffy center or in a basket.
3. Catfish Dishes
It can be served blackened over rice and topped with shrimp and crawfish or just fry it up. Either way, you can’t go wrong with catfish anytime of the year.
