WEST ALLIS — Among the cheese curds, pork sandwiches and fried Oreos, one vendor stands out among the rest serving up something you wouldn't expect at the Wisconsin State Fair: salad on a stick.
"You’d be surprised. We sell a lot of salads. A whole bunch," Bianco's manager Amber Allsep said.
There aren't many healthy options at the State Fair so Bianco's, which actually says Siggy's on the outside, is a hidden gem for anyone who is gluten-free, lactose intolerant or vegetarian. They serve various wraps and salads. Admittedly, they also sell things like a donut breakfast sandwich and grilled cheese with macaroni on it, but the salad on a stick is one of its staple treats.
"Everything is on a stick at the fair. We wanted to jump in on it, and we thought salad on a stick was a great way to be a part of that, and be a little bit healthy as well," Allsep said.
If you are looking for gluten-free, vegetarian, healthy and lactose-free food, Bianco's (or Siggy's) is a one-stop shop and may be your only options.
There are smoothie vendors, but the ingredients in that are unknown and could negate any healthy aspects of it. You can find deep-fried green beans, but that seems to defeat the purpose of vegetables.
If you have a food allergy, you are going to have to look hard and ask a lot of questions of the vendors to make sure you can eat their food.
